Vegetable Cutlet


Vegetable cutlet is a good snack which everyone likes very much. It’s very easy to prepare in home. Here is a step by step process to prepare vegetable cutlet which I tried myself and it came out really well.

Ingredients

Potato – 2
Vegetables – Carrot, Beans, peas
Onion – 1
Tomato – 1 (Gives a good taste)
Garlic – 4
Ginger – 1 small piece
Garam Masala powder – ½ tsp
Chilli powder – As required
Mustard – ½ tsp
Cumin seeds – 2/4 tsp
Fennel seeds – 2/4 tsp
Salt – As required
Curry leaves – 10 leaves
Bread – 2 slices
Bread Crumbs
Rice Flour/Maida Flour – As required
Oil – As required to fry

Preparation

Cut potato into 4 pieces. Cut vegetables into small pieces and boil it. If you are going to keep in pressure cooker just sprinkle water and make it to 2 to 3 whistle. After boiling peel off potato’s outer skin.



Allow the vegetables to cool down. Dry the water from the vegetables if you have water left out.  Mash potato and mix all the vegetables in one vessel. Put chilli powder and turmeric powder in the vegetables and keep it aside.

To Fry





Take a pan, pour oil. Once the oil gets hot put mustard, let it burst. After that put Cumin and fennel seeds. Put chopped onion, garlic and ginger. Fry Onion till it becomes brown. Then put some curry leaves and tomato. Fry it for 2 to 3 mins. Put Garam masala and all the vegetables. Add some salt.  slice bread and mix it with this. 





From pan shift it to some other vessel.




Make balls and you can make to a shape which you like. I have made it as flat like below. 
Mix rice flour/maida flour with water.
Note: I used Rice flour and it came out very crispy!!! You can use which ever you like.




Cutlet Final step

Take the cutlet and dip it in rice flour/maida flour and then dip in bread crumbs. 
Heat the pan and pour oil. Put the above cutlet in pan and fry it.



Now yummy cutlet is ready to eat. Serve Vegetable cutlet with tomato ketchup.
Have it with tea/coffee.


Around 18 cutlets can be prepared with the above proportion.

Note:You can also use beetroot in the vegetables. I used only carrot.
