Keerai Sambar/Spinach Sambar

Spinach is healthy and keeps your stomach clean. Green Vegetable is also good for health and eyes. It has got many health benefits.

Ingredients

Toor Dal - 1/2 cup
Spinach- 1 bunch
Turmeric Powder - 1/2 tsp
Onion -1
Green Chilli - 2
Chilli Powder - 1 tsp
Pepper Powder - 1/2 tsp
Asafoetida - 1 pinch
Garlic - 3 pieces
Salt - As required


Preparation Method

1. Clean Spinach with running water
2. In a pressure cooker, add Toor dal, Water as required, Spinach, Turmeric Powder and little bit oil


3. Switch off in 3 whistles
4. In a pan, add oil, cumin seeds, asafoetida, garlic. Saute for few minutes
5. Add Onion, Green Chilli and all spicy powders
6. Make sure the raw smell goes away and add it to boiled toor dal
7. Add salt and allow it to boil for 2 minutes and switch off the flame

Serve this with hot rice with Papadam/Appalam or pickle.

Rajma Masala

Rajma or kidney beans as the name goes is good for kidneys and keeps you healthy. This dish can be had with Rice/Chapathi/Dosa. Goes very well with hot rice.

Ingredients

Rajma - 1/2 cup (soaked overnight or atleast 6 hrs)
Onion - 1
Tomato - 1
Chilli Powder - 1 tsp
Corriander Powder - 1 tsp
Cumin Powder - 1/2 tsp
Turmeric Powder - 1/3 tsp
Garam Masala Powder - 1/3 tsp
Cumin seeds - 1/3 tsp
Ginger Garlic paste - 1/2 tsp
Salt - As required
Oil/Ghee - 1 tsp

 Preparation Method

1.Boil Rajma with 2 cups of water. Turn off the pressure cooker with 2 whistles
 
2. In a pan add Oil/Ghee. When it is hot add cumin seeds
3. Add Onion, Ginger Garlic paste and fry until raw smell goes away
4. Add shopped tomato and fry it for 1 minute
5. Add all the powders and saute it for 1/2 minute
6. Add little water and allow it to boil for 5 minutes. The tomato will get mashed and the paste gets mixed with all the powders which gives a thick paste
 
7. Add little water from boiled rajma if extra water is present
8. Add Rajma after 5 minutes and then add salt as required
9. Boil for a minute and then garnish with corriander leaves if you have


Enjoy having this with hot rice. Appalam/Papad goes well as a side!

Tips

Do not overcook Rajma as this would spoil the recipe. 1 or 2 whistle is sufficient.

Butter Milk kolumbu



Ingredients

White pumpkin – 1 piece
Water – to cook
Coriander leaves
Curry leaves

To Grind

Coconut – ½ cup
Small Onion’s – ½ cup
Green chilli – 2
Pepper – 1 spoon
Cumin seeds – ½ spoon
Turmeric powder – ½ spoon
Garlic - 2
Coriander seeds – 1 spoon
Curry leaves - 1
Butter Milk - 3 cups
Salt - as required

Preparation


1. Pressure cook white pumpkin with 3 whistle.
2. Grind the ingredients mentioned under “To Grind”
3. Pour only ½ cup of butter milk and grind well. It should be like below consistency

4. In a vessel pour the grinded mixture and put white pumpkin
5. Pour butter milk and add salt as required. Boil well
6. Garnish with coriander leaves and curry leaves 


Instead of white pumpkin, Ladies finger, capsicum and beetroot can also be used.
